EAT YOUR WASTE

The interactive round table „EAT YOUR WASTE“—What if leftovers were a luxury?—takes a fresh look at circular food design. With Armin Winter (BOKU), Michael Neuman (KitoCoat), Michael Moser (Cucina Alchimia), Alexandra Brückner (Vienna Design Week) and Christine Bertl (Circular Economy Forum Austria) discusses systemic synergies and transdisciplinary networks. Only close, cross-sector collaboration makes it possible to unlock unused biological resources and make them sustainably accessible. On site, using the example of a washable and edible food protective coating, it will be demonstrated how the various roles and areas of expertise interlock to pave the way from an unused resource to a circular product – with visitors having the opportunity to test the coatings for themselves on the spot and to play an active part in the discussion.
